
I thought healthy cookies were an oxymoron too...until I had these! They are so yummy, and great for people who made resolutions to eat better but still want a treat once in a while. I love them, so I thought I'd share them with all of you:
"Mom's Healthy Cookies"
1/2 cup peanut butter
1/2 cup oil
1 cup honey
2 eggs
1 tsp. vanilla
1 1/2 cup whole wheat flour
1 tsp. soda
1 tsp. salt
3 cups oats
nuts optional
Cream together peanut butter, oil, honey, eggs, vanilla. Mix together dry ingredients, except for the oats, and sift into egg mixture. Add the oats and mix well. Drop by the spoonfuls on greased cookie sheet. Bake at 350 F. for 10-12 minutes.
YUMMY!

I remember these, I actually think I have the recipe written down on some piece of scrap paper. I'll have to give them a whirl now that I have the recipe right in front of me.

oo sorry abby- they look really nasty! i am sure they taste great. i am all about healthy treats! by the way- your blog layout is really nice. probably mt favorite that i have seen. i don't get all that html stuff or else i would download the same digital paper as you and copy!
I know they LOOK nasty, but taste them! (Plus, I downloaded that picture from the internet, those aren't really them :) ) hehe..
